Baked Huli Huli Chicken

Ingredients:

  • 8 chicken thighs, bone-in and skin-on
  • 1/2 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup chicken broth
  • 2 tablespoons fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh pineapple slices, for serving
  • Chopped green onions and sesame seeds, for garnish

Directions:

  1. In a large mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, sesame oil, and Worcestershire sauce. Season with salt and pepper.
  2. Add chicken thighs to the marinade, making sure each piece is well-coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  3. Preheat oven to 375°F (190°C). Place marinated chicken thighs on a baking sheet, and reserve the marinade.
  4. Bake for 45-50 minutes, or until the chicken is cooked through and the skin is caramelized.
  5. While the chicken bakes, pour the reserved marinade into a small saucepan. Bring to a boil, then reduce heat and simmer until thickened, about 10 minutes.
  6. Serve the baked chicken with the reduced sauce, fresh pineapple slices, and garnish with chopped green onions and sesame seeds.
