Ingredients:
- 8 chicken thighs, bone-in and skin-on
- 1/2 cup pineapple juice
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup chicken broth
- 2 tablespoons fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh pineapple slices, for serving
- Chopped green onions and sesame seeds, for garnish
Directions:
- In a large mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, sesame oil, and Worcestershire sauce. Season with salt and pepper.
- Add chicken thighs to the marinade, making sure each piece is well-coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- Preheat oven to 375°F (190°C). Place marinated chicken thighs on a baking sheet, and reserve the marinade.
- Bake for 45-50 minutes, or until the chicken is cooked through and the skin is caramelized.
- While the chicken bakes, pour the reserved marinade into a small saucepan. Bring to a boil, then reduce heat and simmer until thickened, about 10 minutes.
- Serve the baked chicken with the reduced sauce, fresh pineapple slices, and garnish with chopped green onions and sesame seeds.
