Baked Sage Chicken Meatballs with Parmesan Orzo

Ingredients:

For the Meatballs:

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons fresh sage, chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste

For the Orzo:

  • 1 cup orzo pasta
  • 2 tablespoons unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Directions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix together ground chicken, breadcrumbs, Parmesan, egg, sage, garlic, salt, and pepper. Form into meatballs and place on the prepared baking sheet.
  3. Bake for 20-25 minutes, until cooked through and lightly golden.
  4. Meanwhile, cook the orzo according to package instructions, then drain and return to the pot.
  5. Stir in butter, Parmesan, and heavy cream into the orzo over low heat until creamy. Season with salt and pepper.
  6. Serve the meatballs over the creamy Parmesan orzo, garnished with fresh parsley.
