Ingredients:

  • 1 pie crust (store-bought or homemade)
  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1 cup cherry tomatoes, halved
  • 6 slices bacon, cooked and crumbled
  • 1 cup spinach, roughly chopped
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375Β°F (190Β°C).
  2. Roll out the pie crust and press it into a 9-inch quiche dish. Prick the bottom with a fork.
  3. In a large bowl, whisk together eggs and heavy cream. Stir in cheddar cheese, cherry tomatoes, bacon, and spinach. Season with salt and pepper.
  4. Pour the mixture into the pie crust.
  5. Bake for 35-40 minutes, or until the quiche is set and the crust is golden brown.
