Caramelised Onion Quiche with Cheddar and Bacon

Ingredients:

  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • 200g smoked bacon, chopped
  • 4 large eggs
  • 200ml heavy cream
  • 100g aged cheddar, grated
  • 1 pre-made pie crust
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 190°C (375°F).
  2. In a skillet over medium heat, add olive oil and onions. Cook until softened. Add brown sugar and balsamic vinegar, cooking until caramelised. Set aside.
  3. In the same skillet, cook the bacon until crispy. Set aside on paper towels.
  4. In a bowl, whisk together eggs, cream, salt, and pepper.
  5. Spread the caramelised onions over the bottom of the pie crust, then sprinkle over the cooked bacon and grated cheddar.
  6. Pour the egg mixture over the onion, bacon, and cheese.
  7. Bake for 25-30 minutes or until set and golden brown.
