Ingredients:
- 1 tablespoon olive oil
- 2 large onions, thinly sliced
- 1 tablespoon brown sugar
- 2 tablespoons balsamic vinegar
- 200g smoked bacon, chopped
- 4 large eggs
- 200ml heavy cream
- 100g aged cheddar, grated
- 1 pre-made pie crust
- Salt and pepper to taste
Directions:
- Preheat oven to 190°C (375°F).
- In a skillet over medium heat, add olive oil and onions. Cook until softened. Add brown sugar and balsamic vinegar, cooking until caramelised. Set aside.
- In the same skillet, cook the bacon until crispy. Set aside on paper towels.
- In a bowl, whisk together eggs, cream, salt, and pepper.
- Spread the caramelised onions over the bottom of the pie crust, then sprinkle over the cooked bacon and grated cheddar.
- Pour the egg mixture over the onion, bacon, and cheese.
- Bake for 25-30 minutes or until set and golden brown.
