Caramelised Onion Quiche with Cheddar and Bacon

Ingredients:

  • 1 ready-rolled shortcrust pastry
  • 8 slices bacon, chopped
  • 3 onions, thinly sliced
  • 4 eggs
  • 1 cup heavy cream
  • 1 cup cheddar cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Lay the pastry in a 9-inch pie dish, trim the edges, and prick the base with a fork. Line with baking paper and baking beans, then bake for 15 minutes.
  3. In a pan, cook the bacon over medium heat until crisp. Remove bacon and set aside. In the same pan, add olive oil and caramelise the onions over low heat for 20 minutes.
  4. In a bowl, whisk together eggs, cream, salt, and pepper.
  5. Spread the caramelised onions over the cooked pastry base, sprinkle with cooked bacon and grated cheddar.
  6. Pour the egg mixture over the top. Bake for 25-30 minutes or until set and golden brown.
