Cheesy Broccoli Rice Casserole

Ingredients:

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 2 cups broccoli florets
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 2 cups cooked rice
  • 1 cup cheddar cheese, shredded
  • 1/2 cup bread crumbs
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the broccoli florets to the skillet and cook until they start to soften, about 3 minutes.
  4. Stir in the cream of mushroom soup and chicken broth until well combined. Then, add the cooked rice and half of the cheddar cheese. Season with salt and pepper.
  5. Transfer the mixture to a baking dish. Sprinkle the remaining cheddar cheese on top, followed by the bread crumbs.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the bread crumbs are golden brown.
