Classic French Spinach Quiche

Ingredients:

  • 1 pie crust (homemade or store-bought)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 10 ounces fresh spinach, washed and chopped
  • 1 cup heavy cream
  • 3 large eggs
  • 1 cup grated Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • A pinch of nutmeg

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crust and fit it into a 9-inch pie dish. Trim the edges and use a fork to prick the bottom.
  3. Heat olive oil in a large skillet over medium heat. Add the onion and sauté until soft, about 5 minutes.
  4. Add the spinach in batches, stirring until it wilts down. Remove from heat and let cool.
  5. In a mixing bowl, whisk together the heavy cream, eggs, Gruyère cheese, Parmesan cheese, salt, pepper, and nutmeg.
  6. Squeeze the excess liquid from the spinach and onion mixture, then spread it evenly over the pie crust.
  7. Pour the egg and cream mixture over the spinach.
  8. Bake for 35-40 minutes, or until the quiche is set and the crust is golden brown.
  9. Let cool slightly before serving.
