Ingredients:
- 1 pie crust (homemade or store-bought)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 10 ounces fresh spinach, washed and chopped
- 1 cup heavy cream
- 3 large eggs
- 1 cup grated Gruyère cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- A pinch of nutmeg
Directions:
- Preheat your oven to 375°F (190°C).
- Roll out the pie crust and fit it into a 9-inch pie dish. Trim the edges and use a fork to prick the bottom.
- Heat olive oil in a large skillet over medium heat. Add the onion and sauté until soft, about 5 minutes.
- Add the spinach in batches, stirring until it wilts down. Remove from heat and let cool.
- In a mixing bowl, whisk together the heavy cream, eggs, Gruyère cheese, Parmesan cheese, salt, pepper, and nutmeg.
- Squeeze the excess liquid from the spinach and onion mixture, then spread it evenly over the pie crust.
- Pour the egg and cream mixture over the spinach.
- Bake for 35-40 minutes, or until the quiche is set and the crust is golden brown.
- Let cool slightly before serving.
