French Onion Stuffed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1 cup beef broth
  • 1 teaspoon thyme, dried
  • 1 cup Gruyère cheese, shredded
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/2 cup white wine (optional)

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions, and cook, stirring occasionally, until caramelized, about 15-20 minutes. Add garlic, thyme, and white wine (if using). Cook until the wine is mostly evaporated.
  3. In the meantime, cut a pocket into the side of each chicken breast. Season with salt and pepper.
  4. Stuff each chicken breast with the caramelized onion mixture and Gruyère cheese. Secure with toothpicks if necessary.
  5. In the same skillet, heat the remaining olive oil and butter over medium-high heat. Sear the chicken breasts on each side until golden, about 2-3 minutes per side.
  6. Transfer the chicken breasts to a baking dish. Pour beef broth into the skillet, scraping up any browned bits. Bring to a boil and then pour over the chicken in the baking dish.
  7. Bake for 20-25 minutes, or until the chicken is cooked through.
  8. Remove toothpicks, slice, and serve.
