Hot and Sour Chicken Soup

Ingredients:

  • 200g chicken breast, thinly sliced
  • 4 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon white pepper
  • 1 teaspoon chili sauce
  • 1 tablespoon cornstarch, mixed with 2 tablespoons water
  • 1 egg, lightly beaten
  • 100g bamboo shoots, thinly sliced
  • 100g mushrooms, thinly sliced
  • 1 tofu block, diced
  • 2 green onions, chopped
  • A handful of coriander, for garnish

Directions:

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken breast slices and simmer for about 5 minutes, until they are cooked through.
  3. Stir in soy sauce, rice vinegar, white pepper, and chili sauce.
  4. Gradually add the cornstarch mixture, stirring constantly, until the soup thickens slightly.
  5. Slowly pour in the beaten egg, stirring in a circular motion to create egg ribbons.
  6. Add bamboo shoots, mushrooms, and tofu. Cook for an additional 5 minutes.
  7. Garnish with green onions and coriander before serving.
