Irish Cream Macarons

Ingredients:

  • 100g almond flour
  • 100g powdered sugar
  • 72g egg whites, at room temperature
  • 100g granulated sugar
  • 1/4 tsp cream of tartar
  • 2 tsp Irish cream liqueur
  • Green food coloring (optional)

Chocolate Ganache:

  • 100g dark chocolate, chopped
  • 100ml heavy cream
  • 1 tbsp Irish cream liqueur

Directions:

  1. Macaron Shells: Sift almond flour and powdered sugar together into a bowl.
  2. In a separate bowl, whip egg whites until foamy. Add cream of tartar and gradually add granulated sugar, continuing to whip until stiff peaks form. Blend in Irish cream liqueur and food coloring until just combined.
  3. Fold in the almond flour mixture in three additions until the batter flows like lava.
  4. Pipe 1-inch circles onto a baking sheet lined with parchment paper, tapping the sheet to release air bubbles. Let sit at room temperature for 30-60 minutes, until a skin forms on the surface.
  5. Preheat oven to 300°F (150°C) and bake for 18 minutes. Allow to cool completely before filling.
  6. Chocolate Ganache: Heat heavy cream until just simmering, then pour over chopped chocolate. Let sit for 1 minute, then stir until smooth. Mix in Irish cream liqueur.
  7. Once cool, pair macaron shells by size and fill with ganache. Sandwich together and chill for best flavor.
