Mushroom Spinach Soup with Middle Eastern Spices

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 pound mushrooms, sliced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth
  • 4 cups fresh spinach, chopped
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Directions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  2. Add the mushrooms and cook until they are soft, about 10 minutes.
  3. Stir in the cinnamon, coriander, and cumin, and cook for another minute until fragrant.
  4. Pour in the vegetable broth and bring the mixture to a boil. Lower the heat and simmer for 15 minutes.
