Spinach and Feta Quiche

Ingredients:

  • 1 ready-to-use pie crust
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup feta cheese, crumbled
  • 2 cups spinach, chopped
  • 1/4 cup parmesan cheese, grated
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and press it into a 9-inch quiche pan.
  3. In a skillet over medium heat, heat the olive oil and sauté the onion until translucent. Add the spinach and cook until wilted. Set aside to cool.
  4. In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
  5. Stir in the feta cheese, parmesan cheese, and the cooled spinach and onion mixture.
  6. Pour the filling into the prepared pie crust.
  7. Bake for 35-40 minutes, or until the quiche is set and the crust is golden brown.
  8. Let cool for 10 minutes before slicing and serving.
