Baked Chicken and Ricotta Meatballs with Broccolini

Ingredients:

  • 1 lb ground chicken
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 bunch broccolini, trimmed
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, salt, pepper, and oregano. Mix well until evenly combined.
  3. Form the mixture into meatballs and place on a baking sheet.
  4. Toss broccolini with olive oil, salt, and pepper in a separate bowl, then spread around the meatballs on the baking sheet.
  5. Bake for 20-25 minutes, or until meatballs are golden and cooked through.
  6. Serve meatballs with roasted broccolini on the side.
