Stuffed Portobello Mushrooms

Ingredients:

  • 4 large portobello mushrooms, stems removed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup spinach, chopped
  • 1/2 cup ricotta cheese
  • 1/4 cup parmesan cheese, grated
  • 1 clove garlic, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup mozzarella cheese, shredded
  • 2 tablespoons fresh parsley, chopped

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Brush both sides of the mushrooms with olive oil and season with salt and pepper. Place them on a baking sheet.
